Mamiya-Sekor 100 3.5. Changing shutter speed after cocking the shutter

This is a new lens for me, and earlier today I changed the shutter speed not realizing I had already cocked the shutter. This reminded me of the warning on Rolleiflex synchro-compures not to set the shutter to 1/500, cock it and then change the shutter speed. Is there any similar type of warning for the Mamiya-Sekor 100mm 3.5 or for leaf shutter lenses in general?

Yes, it's the same deal. This is the case with many leaf shutters. You should always adjust before recocking.

The Seikosha shutter does not have the extra spring that accellerates the shutter blades when set to 1/500s, like in the Synchro Compur shutter. As far as I can tell from looking at the innards of Synchro Compur shutters, this spring is the only reason why you should not change the shutter speed away from 1/500 on the Synchro Compur. I don't think that you can harm a Seikosha (or Seiko) shutter on a Mamiya Sekor lens by changing the shutter speed after cocking it. Of course, YMMV.
