Super Bowl Snacks 2012

I am not sure I will be able to make up a Super Bowl menu this year but I was inspired by a certain member here to at least cover the topic.

While the American Super Bowl may not inspire some of our off shore members I thought it would be pretty cool if those folks from places beyond the States could describe some of their favorite foods for celebrating their local sports championship events as well as in return learning a couple snacks from the States.

I will start with a few links to items I might want to see around the house on Super Bowl Day.

Queso dip is pretty popular down in the Texas part of the country. It is chili infused warm cheese dish best served with fresh crispy salted corn tortilla chips. Here is a recipe I found that is pretty close to something we might make on game day. It has spicy breakfast sausage and some additional chilies to kick it up. If you are wanting to spend a little more on the quality of the ingredients you might consider this recipe from the Homesick Texan. It uses some more natural cheeses and some black eyed peas and greens. I am going to have to try a version of that.

Quesadillas are another easy to prepare snack for the big game. The variety is unending. They can be vegetarian to full on carnivore in design. This recipe combines sweet, savory and spice. Grilled Chicken and Pineapple Quesadillas.

Sloppy Joe's are fun to make and messy fun to consume. This is another easy recipe from The Homesick Texan that puts a spicy Tex-Mex twist on the standard recipe.

Fajitas is another Tex-Mex dish that is easy to prepare and can fit a wide variety of palates. This recipe comes from me back in the spring of 2011. Seafood, chicken, pork and beef can be substituted.

Nachos - nearly everyone has heard about or even tasted nachos by now but I suspect that few know of the history of the dish. So simple, fresh and tasty.

Home Made Chili - There are as many ways to make authentic Texas chili as there are miles between the borders of Texas. One commonality is great meat and no beans. I am going to reserve a spot for Photo.net's own Matt Laur to post his Super Bowl Chile recipe -here is a preview of what he is proposing.

Not to worry - there's a nice chunk of venison going under the knife tomorrow, and it will be joined by some perfectly browned cubes from a gorgeous 5-pound hunk of marbled boneless beef chuck. Other victims will include some fresh ancho chiles, and a bit of black stout along the way. Many other ingredients will give their lives for the greater good. In no particular order ... a head of garlic, some cumin, allspice, cinnamon, cloves, oregano, coarse salt, various formats of tomato and onion, some masa for thickening ... and there will be some fresh cilantro, additional varieties of onion, fresh diced tomatoes, some sour cream, and a bit of shredded, prehistorically aged cheddar to top.

Best estimate so far is about 11 hours to make it all come together (it's not non-stop work).

I can't wait to see the evidence.

Okay, that's all I have for suggestions. Hoping to see some feedback from some of the sports fans across the photo.net community.

I have zero interest in football, let alone the Superbowl. I don't even know who's playing. Not being culinarily talented, I often take an easy route. A snack/light dinner that has proven a hit with friends is the Carroll Shelby White Chili Mix, basically a kit to make White Chili with chicken. I pound boneless chicken breasts flat, then sear them and cut them into .5" cubes. I follow the instructions, but alter the spicing to taste, and serve it on natural (non GM) chips. It's like a mega-nachos.

Of course, for the real cooks there are zillions of white chili recipes on the web, but what I use is quick, dirty and people love it. I have also experimented a bit, having made it with pork, using butterfly-cut chops, which work great, and twice I've made it with fish. Once using tilapia, the other with rainbow trout, both of which were a hit and seem to call for more exploration. Next on my agenda will be a vegetarian version.

Habanero Rice
4 tbl unsalted butter
1 red onion chopped
2 Habanero diced
1 teaspoon cumin
1 cup rice
Saute onions a few minutes on med; add habanero, cumin, rice. Saute a few minutes longer.
Add:
2 cups stock
1 can diced tomato
1/4 cup chopped cilantro
Bring to a boil, reduce heat, cover until rice cooked. Serve as is or with sour cream (for the more timid)
Add another habanero or two in the beginning if you're really brave.

Vegetarian chili...lol, now that's funny!

Mine will be pork this year, from a smoked pork roast. Gonna go with a chipotle theme this year, this should go very nicely over a bed of rice. I like the fresh chopped tomatoes and onions with cilantro idea, it will give it a bright fresh taste to tone down the smoke and chipotle. Man, I'm getting hungry already!

I swear to you the flavor is incredible compared to other cheese flavored chips and crackers. Resembles the flavor of expensive emmental Swiss cheese. Only 3.5 grams of fat per 30 gram (18 chip) serving. Bought four of the 7 oz. box for $1.50 each at my local Walmart.

My wife and I will be making my dad's Mexican cornbread recipe. It's so good that even canned tamales go well with it.

It will be interesting to see what everyone is going to fix and eat!
Every year, I get together with a small group of friends and we generally don't go for the 'normal Superbowl fare'.
This year, I'm taking guac and chips along with some smoked pork tenderloin sandwiches. I know someone else is going to bring a cake (I hope sour cream pound cake!) and another is bringing chicken/artichoke dip. One guy always brings KFC (he doesn't cook). There will probably be another 2 or 3 who will come and surprise us!

Thanks for the link to the Homesick Texan. That queso sounds delicious and I saw another recipie for homemade queso blanco that I might try out. Of course, none of this is helping me lose weight!
