Decided in the last moment for a 1-day trip in Vancouver, BC.
Any suggestions for nature, architectonic or scenic locations will
be appreciated...

1 day? I guess you take what you can get. I cant say I had much time there either, but had lots of fun! I am not a local, but since noone else has posted anything, I can start you off on something.... I hope a local will fill you in better.
I guess if you only have 1 day, and havnt seen the city, then stay in and around the city have a walk through stanley park(this will be most likely the nature component of your 1 day journey). That alone will be a full day!!

Was there with my girlfriend two years ago for 13 days. We based ourselves outta downtown, rented a car and had a blast. A one days visit is very iffy because of the WEATHER- it rains there alot, and one day is a crapshoot. There's simply too much to do to do the place justice.
Parks are everywhere. Buy or borrow a good travel book and check out Stanley Park, Lighthouse Park, Queen Elizabeth Park. Go north over the Lyons Gate Bridge and check out the park where the Capilano Bridge is. That is a great, great walk- beautiful country. You'll kick yourself for going there just one day, especially if the weather happens to be bad- you'll probably get nothing out of it if it does. Do yourself a favor and plan to go there sometime for at least a week so you can take it all in from the city to Victoria to maybe a trip to Whistler and some great points to the east too. It's the only non-Carribean visit we've made together and it was probably are favorite trip, ever. We'll go back again.

One day in Vancouver?
Where are you coming from?
I'd say that for "nature, architectonic or scenic locations" you should think about basing your day around the Bayshore.
A ten minute walk from the Bayshore will take you into the core of downtown for architectural shots of the library, new & old courthouse + whatever else catches your eye.
A few steps from the Bayshore is Stanley Park which is considered the jewel of Vancouver's parks system.
If time permits, then head over to the North Shore and visit Lynn Canyon for a loop walk across the suspension bridge down to the Twin Falls bridge, then back up to your car.

You know what, I titled that picture incorrectly. How embarassing. That image above IS the Lynn Canyon Bridge. How time erases memory. The Capilano Bridge is the one you always hear about, but the Lynn Canyon Bridge/nature walk is much nicer.

I live in Vancouver, BC. Admittedly, only one day in such a target-rich environment is pretty limiting. I could throw any number of ideas at you for nature, architechture or scenic.
For only one day, and from your brief description of what you want, I'll second Dan's suggestion. Highest concentration of subjects in a relatively small area to cover in a day. Stanley Park is great as you can get nature and some decent skyline shots at the same time. Note: it takes about 2 hours to walk all the way around the seawall.

For some nice historic architectural shots, right downtown: Gastown.

Go for a walk around Chinatown and Gastown (but stay away from Hastings St!). From downtown, if you're walking, your best bet is to approach Chinatown via Pender Street. There's always something worth photographing in Chinatown, especially the food markets on Keefer St. Gastown is also interesting although perhaps not as photogenic, but there is always the Canada Place Pavillion at its far end, which is worth a walk-around.
Robson Street, Denman Street, and Davie Street are all great for people watching.
Check out the main Vancouver Public Library building. It's quite beautiful. And the Vancouver Art Gallery has a great photo exhibit right now that is going on for the next few months.
The Capilano Susp Bridge is a nice photo opp although a bit spendy and perhaps you should focus on the downtown area if you're only here for one day.
BTW, if you like walking, you could walk all along the city's waterfront, from Canada Place, around Stanley Park, and then along English Bay/False Creek, through Granville Island, and then out to Kits Beach, and then on to the UBC Endowment Lands. The False Creek area is great for getting some shots of moored sailboats. When you reach the Granville Island Public Market, you can take a water taxi back to English Bay to save some wear and tear on your feet.

More accurately, I should have said, stay from Hasting St in the areas 3-4 blocks west of Main St., and 5 or so blocks east of Main St.
